Today is Sunday so we made hard-boiled eggs. Each Sunday I take time to hard-boil extra eggs for the week. Currently, we are getting about 4 eggs daily, so by Sunday our egg rack is often quite full. I love our egg rack, it ensures that the oldest eggs get used first. The kids all know to put eggs on the top row each day, and then they roll down as we use them. When I hard boil eggs, I like to use up enough eggs so we have about a dozen left to use for cooking and baking during the week. Right now we eat most of the eggs hard-boiled, but I still like to have plenty on hand for cooking if we need.

I love to use my Instant-Pot for making hard-boiled eggs. They are perfect every time (if I remember to set the timer) with the 5-5-5 method. Even with fresh eggs, our eggs are always easy to peel!! When cooled quickly, the yokes stay a nice pretty yellow too! The 5-5-5 method is pretty simple, I wash my eggs right before putting them into the Insta-Pot. We keep our eggs unwashed until we are ready to use them. Aren’t they so pretty all fresh and shiny!! I can’t wait until some of my colored-egg laying hens start laying!! I have done up to 18 eggs in one batch with no problem. Always be sure to use the trivet when boiling eggs, this helps to keep the eggs off the base of the pan. Typically my water is just about at the bottom of the rack.

I next add at least a cup of water. I never measure but instead, grab a pint jar and use that to add water. I close the lid and toggle the switch to sealing. My Instant-Pot has an egg button, which is preset to 5 minutes of cook time. With the 5-5-5 method, you cook for 5 minutes, natural release for 5 minutes, and run under ice water for 5 minutes. The natural release is where I often lose track of time. Instead, I will quick release it after the 5 minutes of cooking is up, which takes a minute or two, and then I put it under cold water immediately. Too often I forget to take them out after the 5-minute natural release and my yokes turn green. I never eat the yokes so it doesn’t bother me, but my husband gives me a hard time about being a bad influence on the kids and their yoke eating habits, so I try to keep the yokes looking appetizing.

Doesn’t that egg look perfect!! They peel so great, even days later. Kids sure don’t want to peel difficult eggs. I keep the same purple bowl in the fridge with the hard-boiled eggs so everyone always knows those are the ones to eat. Now we can eat them as a snack, on a salad, or to make egg salad sandwiches.
